Rochford Dans Les Bois Chardonnay draws from the Swallowfield Vineyard in Gembrook, surrounded on all sides by natural forest. Dans le bois means 'in the woods' in French.
Gembrook, in the Upper Yarra Valley, is known for its volcanic derived red soils on a granite outcrop. This quartz rich earth is perfect for growing Chardonnay.
The fruit is crushed and pressed with full solids straight to French oak, around 30% new. Both primary and malolactic fermentation take place with natural yeast. After 10 months on lees in oak, the wine is racked and bottled.
Straw yellow, Rochford Dans Les Bois Chardonnay has complex citrus conserve flavours, and a tight, fresh acid finish. Cellaring potential is 10 years.
